10-DAY SLIM DOWN CHALLENGE: Days 1-5


Welcome to your KICKSTART into a healthier you for 2010!

Below you will find your daily plan for the first 5 days:
(I have lost inches with this twice!)

BEFORE YOU BEGIN: Step on the scale! Write it down & don't cheat! Take your measurements...around chest, biceps, waist (biggest part), hips (biggest part & around the booty), thighs (largest part). You should have 7 measurements written down.

You will also be drinking 8-12 glasses of water each day!!! You will be eating 5 xs/day! For instance: 7am, 9:30am, 12:30pm, 3:30pm, 6pm... something like this. About every 3 hrs or so. No food after dinner! WATER!

HERE'S YOUR 10-DAY SLIM DOWN CHALLENGE:

DAY 1:
WORKOUT: 1 HR HARD CARDIO (WORK IT!)

Breakfast - 1 slice turkey bacon, 1 cup low-fat cottage cheese, 1 cup fresh blueberries, 1 multi-grain waffle (no syrup! Use the berries!)
Snack - Protein Smoothie - 1 cup raspb or blueberries, 1 scoop protein powder, 1 cup skim milk or water and blend
Lunch - Tuna or Chicken Salad - include: romaine lettuce, spinich, chopped onion, egg, mustard - to taste
Snack - peanut butter and celery - 3 stalks, 1 Tbsp pb.
Dinner - Stir Fry: 4 oz skinless chicken breast, 1/4c brown rice, snow peas, onion, soy sauce.

DAY 2:
WORKOUT: 1 HR HARD CARDIO (KICK IT!)

Breakfast - 3 egg whites, 1 cup broccoli
Snack - Protein Smoothie - same as day 1 - add ice this time.
Lunch - Turkey Sandwich - 1 slice whole wheat bread, 3 slices turkey, 4 romaine leaves, mustard, 2 slices tomato, 1 c alfalfa sprouts
Snack - cottage cheese
Dinner - Salmon (5oz) baked/broiled, 1 c steamed asparagus, 2 c romaine lettuce shredded, 1 c cucumbers diced or sliced, 1Tbs italian drsg (lite).

DAY 3:
WORKOUT: 1 HR SCULPT/WEIGHTS - FOCUS UPPER BODY (KILL IT)

Breakfast - 4 egg whites, 1/2 tomato chopped (put then together for a tomato omelet)
Snack - 10 almonds (no flavorings) and 2 Tbl dried cranberries
Lunch - Roast Beef Sandwich and Salad - 4 oz roast beef, mustard, rye/whole wheat bread, 1c shred romaine w/lite italian dressing
Snack - Protein Smoothie - 1/2 c fresh strawb, 1 scoop protein pwdr, 6 oz plain lowfat yogurt and blend
Dinner - Chicken Burrito w/rice and beans: 4 oz chicken, 2 Tbsp salsa w/1 whole wheat tortilla, 1/4c black beans, 1/4c brown rice.

DAY 4:
WORKOUT: 1 HR CARDIO (DO MORE!)

Breakfast - 1 c cottage cheese w 1/2 c raspberries
Snack - 1 pear w/4 slices colby or mozzarella cheese
Lunch - Turkey Avo Wrap: 3 slices turkey, 1 whole wheat tortilla (or 1 slice ww bread), 4 romaine leaves, 2 tomato slices, mustard, avocado
Snack - protein smoothie of your choice
Dinner - Fish and salad: 3 oz halibut, orange roughy, salmon, or tilapia w 1 c steamed broccoli, 2 c shredded romaine w/vinegar&oil.

DAY 5:
WORKOUT: 1 HR CARDIO (GO FOR IT!)

Breakfast - 4 egg whites: scrambled w/3 slices turkey
Snack - smoothie - 1 c blueberries, 1 scoop protein powder, 6oz yogurt & ice.
Lunch - Chicken roll up - 3 oz chicken breast, 2 slices tomato, 4 slices cucumber, 1 c lettuce, 1 Tbsp ranch dressing, 1 whole wheat tortilla.
Snack - 1 Tbsp pnut btr w/1 slice wwheat or multi-grain toasted bread.
Dinner - Steak or Chicken (3oz) broiled or grilled, steamed zucchini slices (or grilled), lettuce and italian for salad.

The Workouts: You can workout at home, or at your local gym. Follow whether I list cardio, weights or a combo. IMPORTANT: If you are doing a Beachbody product like P90X or ChaLEAN Extreme, etc... you can follow their routine guidelines and food suggestions!

Other: After this 10-Days, we will move on to do a 30-Day Challenge! There will be a couple of days break in-between. BEST BOXED BROWNIES

Just FYI... I found this online today and thought I would share since I love brownies!! Avoid most of the time, but if you have to splurge - here you go!
I've never tried the winner, but I use the runner up!

Best Fudge Brownie:

Ghirardelli Ultimate Fudge Brownies
This brownie mix was a clear favorite with our test panel. Not only were there excessive "oohs" and "aahs,” this little brownie packs an over-the-top chocolate punch with great texture and a true dark chocolate taste. As one of our taste testers put it, "Wow! The best part is that while I could eat half a pan of the others, I could probably only eat two or three of these. There's so much fudge!"

Runners Up:
Betty Crocker Fudge Brownies
Fluffy and gooey, Betty’s fudge brownies are a close second to our winner. These brownies are very soft and moist, with good texture and a smooth chocolaty fudge flavor. "If I didn't want to go through all of the work to make the Ghirardelli brownies, this would be my go to mix," one panel member said.

MENU MONDAYS - SALSA!

EASY FRESH SALSA
Make it a fiesta night and enjoy this with enchiladas, tacos, burritos, quesadillas, tamales, taco salad, nachos... or whatever you have!

Ingredients
6 roma tomatoes
1/2 med-sized onion, finely chopped (red onions are my fave)
1 clove garlic, minced
2 serrano or jalapeno peppers, finely chopped
3 T cilantro, chopped
1/8 tsp oregano
1/8 tsp salt
1/8 tsp pepper
1/2 avocado, diced
juice of 1 lime

Method
Combine all ingredients in a bowl and serve immediately or refrigerate and serve within 5 hours for best taste.

MENU MONDAYS - CABBAGE SALAD

Last night I was going to make my normal yummy delicious "Fumi Salad", but to my dismay, I was missing most of the main ingredients. SHOOT!

Being the creative culinary person that I am... I decided to create a different version of the salad with ingredients I had in my fridge.

Thus, the Cabbage Salad was created! I actually might like it better than the original Fumi... try it and let me know what you think!

INGREDIENTS
1 head cabbage chopped or shredded (bag version is fine)
1/2c shredded carrots
1/4c chopped red onion
1/4c chopped green bell pepper
1 chopped tomato (more if you like, that's all I had)
some crispy Chinese noodles or ramen noodles (1/2 bag is good, + or - to taste.)

DRESSING
3 T sugar
1 t pepper
1 t salt
6 T rice vinegar
3/4 c veg/canola oil
- shake together well!

Mix all together and toss with dressing immediately - so good!
Refrigerate any leftovers because it's so perfect the next day!

Just look at this killer HIP HOP HUSTLE group! Lots of energy and a blast of a class in Raleigh, NC! Way to work it ladies!!

To all of my HIP HOP HUSTLE TRAINING Participants: You all came with such great attitudes and a willingness to free it up and dance your booties off!!! Thanks for being so wonderful! It was an absolute PLEASURE to spend the day with each and every one of you and I only hope we can do it again soon!

And a BIG THANK YOU to my KERR YMCA and Group Fitness Director, Mariu Garcia, for hosting this aWeSoMe training!! A great fitness room that I teach Hustle in every Monday morning! I felt so lucky driving just 2 minutes down the road for it!! =) Ahhh!!! Thanks Kerr Y!

If you are a meal-replacement shake drinker - this one is for you!

Ingredients:
1/4 cup crushed ice
1 cup milk
1/4 to 1/2 cup orange juice
1 scoop chocolate Shakeology (or one of your choice)

Directions:
Add all ingredients in the Magic Bullet (or blender of your choice) and blend well.

Viola! Pure chocolate orange bliss!

SHAKEOLOGY RECIPES TO MIX IT UP!

Protein & Fiber Express
Here's an easy, delicious way to get almost all of your recommended daily allowance of fiber.

Ingredients
•1 scoop Shakeology
•1 scoop Shakeology Fiber Boost
•1 cup raspberries
•2 Tbsp. ground flaxseed
•1/2 cup water
Directions: Combine ingredients in a blender. Mix to desired texture.

Nutrition Facts

Protein: 20 g

MENU MONDAYS - BUFFALO CHICKEN WRAP

Buffalo Chicken Wrap
Provided by EatingWell.com

Serves 4
Prep Time 35 min.
Total Time 35 min.
Nutrition Profile: Diabetes Appropriate
Healthy Weight, Heart Healthy, Low Calorie, Low Sat Fat

A bit messy and spicy, but this fiery combo of buffalo chicken in a modern wrap is guaranteed to drip! Enjoy!

INGREDIENTS
2 tablespoon hot pepper sauce, such as Frank’s RedHot
3 tablespoon white vinegar, divided
1/4 teaspoon cayenne pepper
2 teaspoons extra-virgin olive oil
1 pound chicken tenders
2 tablespoon reduced-fat mayonnaise
2 tablespoon nonfat plain yogurt
Freshly ground pepper, to taste
1/4 cup crumbled blue cheese
4 8-inch whole-wheat tortillas
1 cup shredded romaine lettuce
1 cup sliced celery
1 large tomato, diced

COOKING DIRECTIONS
Step 1 - Whisk hot pepper sauce, 2 tablespoons vinegar and cayenne pepper in a medium bowl.

Step 2 - Heat oil in a large nonstick skillet over medium-high heat. Add chicken tenders; cook until cooked through and no longer pink in the middle, 3 to 4 minutes per side. Add to the bowl with the hot sauce; toss to coat well.

Step 3 - Whisk mayonnaise, yogurt, pepper and the remaining 1 tablespoon vinegar in a small bowl. Stir in blue cheese.

Step 4 - To assemble wraps: Lay a tortilla on a work surface or plate. Spread with 1 tablespoon blue cheese sauce and top with one-fourth of the chicken, lettuce, celery and tomato. Drizzle with some of the hot sauce remaining in the bowl and roll into a wrap sandwich. Repeat with the remaining tortillas.

Menu Mondays - SUMMER ROLLS!

Oh my goodness are these good!

There are all kinds of ways to make these tasty treats, but essentially, you just need some fresh ingredients and you're on your way! My favorite ones are at Cheesecake Factory and CPK (California Pizza Kitchen). But I can't wait to make my own!

SUMMER ROLLS
-Shrimp, lobster or crabmeat
-rice paper rounds

And add any combination of the following:
-clear rice noodles (or like them)
-sprouts (optional)
-shredded carrots
-asparagus
-mushrooms
-green onion
-avocado
-cucumber sliced
-cilantro leaves
-basil leaves
-mint leaves

Method:
Take any combination of ingredients and place on the rice paper and fold over in the middle, at the ends and then again in the middle. Cut across at an angle.

Sauce:
Try adding some dipping sauces like soy sauce, peanut sauce, sweet & sour sauce, teriyaki, etc.

Menu Mondays - Pasta!

Since I have this new love of PESTO...

I thought I'd try it out (basil pesto) mixed with some fettucini noodles. Tres Manifique!

I added lots of cubed chicken breast along with diced grilled zucchini and yellow squash, with a dash of salt and fresh ground pepper. It was SO GOOD!

I think I would also liked to have added grilled tomatoes or red bell pepper too to give it even more color and flavor. Some grilled sliced cherry tomatoes would have looked beautiful!

Food is best when presented well! ENJOY!

RALEIGH ROCKS PIYO!

Just look at all of these fun-lovin' PiYo people!! They really did a wonderful job at the PiYo Training on August 8th from 9-5 in Raleigh, NC!

It was a day FULL of poses, exercises, learning time and test taking! Each one passed the written test with flying colors! Each one also Passed the practical testing as well! AWESOME! What a group!!

So I thank them for coming out and working hard in the limited time we had. There is so much to cover and they really dug in and went for it!

A big THANK YOU goes out to SARAH HUFFMAN & the ALEXANDER YMCA in downtown Raleigh, NC for hosting this event! She had SO many of her peeps there and was so all about this training! I'm sure she's glad to have more PiYo Instructors there now to help out Cynthia!!

And THANK YOU to all 23 participants, including some from Greenville, Fayetteville, and even Virgina Beach, VA! And to those in the Raleigh area... be on the lookout for some PiYo classes coming to a club HOPEFULLY near YOU! YEA!
