Microgreen Salad & Basic Vinaigrette

From Beachbody's Ultimate Reset - this salad is the BOMB! (pictured on the left)
MICROGREEN SALAD
Use bulk or bagged mixed baby greens. Add the following:
1/4 cup shredded carrot
1/4 cup chopped cucumber
1/4 cup sliced red bell pepper
1/4 cup sprouts (like radish, alfalfa or broccoli)
1/4 cup chopped tomato
1/4 cup chopped jicama
1/4 cup toasted seeds and nuts (like cashews, pecans, pumpkin seeds or sunflower seeds.) fresh herbs (like basil, oregano, parsley, dill) to taste.
Mix all - serves 1.

Dressing - Use your own low-fat, low-sugar dressing or try this one!

BASIC VINAIGRETTE
1/2 cup EVOO
1/4 cup red wine vinegar
1 tsp Himalayan salt
1 tsp ground black pepper
1 tsp unfiltered honey or raw agave
2 Tbsp fresh lemon juice optional herbs.
Mix all together - serves 8.
