Yummy quick salad based on Beachbody's Ultimate Reset recipe.
1 cucumber, sliced in thick half-moons (opt 1/2 peeled)
1/4 small container plum or cherry tomatoes cut in half
1 Tbsp chopped red onion
1 Tbsp lemon juice
1 Tbsp red wine vinegar
1 tsp balsamic vinegar
2 tsp EVOO
1Tbsp chopped fresh basil leaves
Himalayan salt (to taste)
Herbal seasoning (to taste)
Combine all ingredients in a bowl and toss well. Serves 1.
