One of THE best salads!

From Beachbody's Ultimate Reset recipes
1-2 hearts of romaine chopped
1 cucumber chopped into half-moons or diced
1 ripe tomato, diced or in wedges 5 pitted and sliced Kalamata olives (optional)
1 Tbsp toasted pine nuts (optional)
1 Tbsp reduced fat feta cheese (optional)
3 oz grilled chicken breast, chopped
w/1 serving of Greek Dressing

Toss all ingredients in a bowl and enjoy! Serves 1.

1/4 cup red wine vinegar
1/2 cup EVOO (extra virgin olive oil)
1/4 cup lemon juice
1 Tbsp balsamic vinegar
2 tsp dried oregano
1 tsp Dijon mustard
1 tsp herbal seasoning
2 Tbsp fresh parsley
1/2 tsp Himalayan salt

 Blend all ingredients in a blender on med-high for 2min. Refrigerate in airtight container. If dressing solidifies when cold, let sit at room temp until liquid, then stir. Serves 8.
