Menu Mondays!
SALMON!
It's so good for you with essential omega-3 oil and great protein...this recipe is a hit in our house! Although you could do a basic kosher salt and fresh ground pepper and bake for 15-20min at 400. YUM! But here's another option...
BAKED SALMON W/PECANS
2 Tb dijon mustard
1 Tb reduced fat margarine (melted)
4 tsp honey
1/4 cup fresh breadcrumbs
1/4 cup finely chopped pecans/walnuts
2 tsp chopped parsley
4 (4 oz) salmon filets - or 1 lg filet
salt & pepper to taste
Combine breadcrumbs, nuts and parsley -set aside. Melt margarine and mix with mustard and honey in a small bowl -set aside. Season each salmon filet w/salt and pepper. Place filets in a baking dish sprayed w/nonstick cooking spray. Brush each filetw/mustard mixture. Sprinkle w/crumb mixture & press lightly into filet.
Bake at 450 for 10min per inch of thickness or until fish flakes easily w/fork.
Serve with rice/wild rice, grilled veggies of your choice, and maybe some fresh fruit!

Do you know how many calories are in the foods that you eat every day? You might not know the answer and THIS could be the reason why you can't seem to lose the 'extra weight'. So check into what even a simple veggie sandwich holds in calories - I think you'll be AMAZED!

Menu Mondays!
Here's a new tradition for 2009... MENU MONDAYS! I'm going to post some kind of meal every Monday to get you excited about eating right and having some portion CONTROL!
Here we go!
For the Love of Salad (my own creation)
- Romaine Lettuce
- Feta Cheese with Sun-Dried Tomato (or the kind you like OR omit)
- Green or Red Onions chopped
- Hard-boiled Eggs
- Artichoke hearts/Mushrooms
- Grilled Chicken Breast
Just a small portion of each and mix together. It's all "to taste". Don't go crazy!
Dressing:
Olive Oil and Balsamic Vinegar and freshly ground Black Pepper - shake or mix together first and then add to salad.
It's so, so, so zesty and tastey!

It's 2009!
Well what a great NEW YEAR already! Happy 2009 to you!
It was an AWESOME class today, co-teaching with Amy Perruso at the Kerr YMCA this morning. We did Turbo Kick for 30min, Hip Hop Hustle for 30min, and then Amy lead us in some killer sculpting moves (lots of squats and lunges)! It was a BLAST and we gave away lots of water bottles...which I'm SURE guzzled down fast!
On my watch, we burned over 870 calories in 90min! That is phenomenal!! Way to ring in the New Year with a killer burn!
We didn't get any photos this time...Mariu's new camera didn't charge right, but we know who was there and how great it felt to workout!!
See you at more classes soon...like TOMORROW!! ~Amanda
Last "Favorite Thing" of '08...
Yep - this is a GOOD ONE!
I was having trouble getting my favorite 'stay on forever' lipstick off! Luckily, my sweet friend Renee gave me this Almay makeup remover! It comes off BADA-BING! Mine says 'Moisturizing' on the outside and it's made with Mineral Oil, so it IS oily on the lips, but it's well worth not having to scrub anymore!
Thanks for the perfect item Renee - LOVE IT! ~A
