Homemade Tortilla/Fajita Soup!
Homemade soup was never so easy, SO healthy, and SOOO DELICIOUS!!
Here's a great recipe for a Tortilla/Fajita Soup you make in a good blender. I made it in my Vitamix.
Ingredients:
3 cups broth - vegetable or chicken
1 Roma or on-the-vine Tomato (about 1/2-1 cup)
1 Carrot or about 1/2 cup chopped
1 Celery Stalk or about 1/3 chopped
1 slice of Red Onion/Onion
1 clove of garlic, peeled or 1/4 tsp garlic powder
1/4 cup yellow squash
1/4 cup red bell pepper
1 slice cabbage (or more)
1 mushroom
1 tsp taco seasoning
dash of ground cumin
salt
pepper
Optional Ingredients to prep ahead:
Grilled Fajita Chicken, shredded crockpot chicken (see my recipe on Pinterest)
White or Yellow Corn
Black beans
fresh jalapeƱos
black olives
salsa
cilantro
shredded cheddar cheese
sour cream or plain greek yogurt
fresh baked tortilla strips, crushed tortilla chips
1st Note: Feel free to replace ANY of the above veggies with what you have in your home, like...
1/4 cup zucchini
1/2 cup broccoli
1/4 cup yellow bell pepper
1/4 cup green bell pepper
1/4 cup cucumber
2nd Note: Delete any ingredients if it's not to your liking. I have done this recipe with more carrots and red bell pepper to make a orangey soup. I have used more zucchini and broccoli and cable to make a greener soup. It's usually up to whatever veggies I have in my fridge.
Directions:
- Place broth, tomato, carrot, celery, onion, garlic, squash, bell pepper, cabbage, mushroom, and seasonings into your blender in the order listed and secure lid.
- Slowly blend from low to high. Mine goes from Variable 1 to 10, then High.
- Blend for 6-7min or until steam escapes from the vented lid. (This is if you want it HOT when it's done. If you want to be able to store it and eat it later, or just heat it up more in the microwave, then blend for just 2-3min.)
- Pour into bowl. Add any of the Optional Ingredients above. I usually use grilled or shredded chicken, black beans, corn, crushed chips, tsp salsa, sprinkle of shredded cheddar cheese, dab of real sour cream/greek yogurt, and cilantro! SUPER DELICIOUS! ENJOY!
